Watermelon, Lime & Mint Slush

Watermelon, Lime & Mint Slush is an icy and refreshing drink for a warm afternoon in the garden.

Turns out today has been the hottest day in the UK so far! 25 degrees is actually pretty hot for here and I am definitely not complaining! When we woke up this morning, Tom decided to put on suntan lotion which instantly made me feel like we were on holiday. Technically we are as we are not able to work, but I felt like I wanted to do something a little refreshing for us in the afternoon.

I had watermelon leftover from this recipe I did here…We also had a tonne of limes and we have so much mint in the garden I just don’t know what to do with it all! So why not put everything in a refreshing slush?

Honestly I didn’t expect it to be as tasty as it was! Watermelon doesn’t have too much flavour but adding the lime and mint really makes it come into its own!

Growing Herbs…

I am no green fingered lady, I honestly don’t know why but plants and herbs seem to die on me… a lot! Mint has been my go to herb to grow as it practically grows itself. I go into the garden and water it daily, or sometimes only once a week and it’s always full! It’s a fool proof herb basically and there are so many ways to use it.

Over the weeks we have used it in a risotto, you can use it with lamb, in drinks like mint tea, mint juleps and mojitos! If there is one thing I would suggest is growing mint. The possibilities are endless!

Watermelon, Lime & Mint Slush

Prep Time 10 minutes
Total Time 10 minutes


  • 1/4 Watermelon
  • 1 Lime
  • 4 Mint leaves
  • 200ml Water


  1. Squeeze your lime into a jug and add your mint. Leave that to infuse for a while.
  2. Add your watermelon water and to a blender and blend and mash until smooth.
  3. Pour your lime and mint into the watermelon mixture and stir.
  4. Pour into two glasses and garnish with extra mint leaves.


Pre freeze your watermelon.
