We really love a proper Bolognese with beef mince, but when we’re trying to be a little bit healthier, we switch over to a Turkey Bolognese. It’s still really tasty and rich, but with a lot less fat! If you want to be really good you could also switch out the spaghetti for courgette!
Spaghetti Bolognese – the slightly healthier way!
I found Courgetti about 3 years ago, at first I wasn’t convinced and thought nothing could be a substitute for fresh pasta, and to be honest, nothing can be! But when we are trying to be a little bit better, little substitutes like this can go a long way.
This leads me nicely onto switching out beef mince for turkey mince. At first, my husband couldn’t believe what he was hearing! I think he may have been slightly overreacting. But as Bolognese is one of his absolute favorite meals, along with lasagne and chicken fried rice, chips and curry sauce. I can see his point, if it’s not broke don’t fix it! But in all seriousness, he wasn’t on board at first. I wouldn’t say I’ve converted him, but he really does enjoy this Turkey Bolognese meal now!
*We had the wild garlic delivered in one of our Riverford Organic delivery boxes and I’m a huge convert!! Chopping into it releases a really fragrant smell! It doesn’t last as long as the bulbs, we’ve had it a week and definitely need to use it up by the end of this week! I’m thinking of trying to make it into a paste and I’ll be putting it into a soup too! Any ideas are welcome!
- 250g turkey mince
- 1 stick of celery
- 2 mushrooms
- 1 carrot
- 1 onion
- 1/2 tin of chopped tomatoes
- 1 garlic clove or wild garlic
- Italian seasoning
- 1/2 carton passata
- 1/2 beef stock cube
- 200ml water
- 250g fresh spaghetti
- Firstly, chop up all your veggies. Add the olive oil to the pan and heat, add in your chopped onions.
- Cook on a low heat for about 5 minutes, then add your carrots mushrooms and celery and leave for a couple of minutes, keep stirring!
- Put your turkey mince and cook for a couple of minutes before draining out the fat!
- Add your Italian seasoning – do this to taste, I usually do 1/2 teaspoon and then crumble in your half stock cube.
- Add in your passata, chopped tomatoes, and water and leave on a low simmer for about 10/15 minutes.
- Turn your gas right down now and add some chopped wild garlic. It’s lovely! I like to add 3 leaves!
- Leave to simmer on very low for another 10/15 minutes whilst you cook your pasta. Fresh takes a couple of minutes, dried pasta takes about 10.
- Plate up and enjoy!
