Triple Bacon Cheeseburger, with honey glazed bacon, homemade beef patties and melted cheddar cheese. Served on a toasted brioche bun. I made this bad boy in just 20 minutes. All you need to add is ketchup!
This is quite a burger! It tastes incredible and can be made in pretty much no time at all. The burgers are simple and not overcomplicated with too many seasonings, egg whites, or breadcrumbs.
Just Beef, Salt and Pepper!
I hate seeing burger recipes that contain all these shitty pointless additives. Onion powders, seasonings, so-called rub flavours. A burger is a burger. A f*cking beef burger. Don’t waste time adding useless crap to your beef. Stick with just beef and salt and pepper. It will stick together if you stick it in the freezer for 10 minutes to firm up before cooking. It won’t freeze it.
I learnt this from one of my favourite chefs Matty Matheson. He’s pretty straight-talking and knows his stuff. Especially burgers. The self-confessed burger king has some great Youtube videos explaining the best way to cook a burger. I’ve watched a few of these, and have eaten burgers all over the world. I’ve eaten quite a lot in the states too. This is where you can get a good burger!
My love for American Burgers
I love America. The food’s not exactly French cuisine, but if you want good BBQ food you’re never stuck for choice. You’re spoilt for choice when it comes to burgers. Fatburger, Wendy’s, Five Guys, Jack in The Box. Head to LA and there’s a burger joint on nearly every corner. I love the place.
Texas BBQ Food is something that really inspired me. After visiting a diner in Vegas and having the most awesome beef brisket roll. I’ve created a few recipes that I’ll be sharing with you next week. Most of which have been cooked in a smoker!
The best thing we have here in Birmingham is Five Guys. The nearest Fatburger is in Camden, London. I think the nearest Wendys is probably New York. That’s just under 3500 miles from me. `This is why I’m trying to perfect these burgers. I will flood the blog with different burger recipes!
Making the beef patties…
Make sure you pick the right meat when making your burgers. I usually ask the butcher for some good beef chunks and I mince it myself. braising beef, chuck, or blade is the best to use. On this occasion, I used some leftover mince from Sainsbury’s. I wouldn’t usually use less than 20% beef mince as it’s you need good fat content for flavours. I cooked the burgers in beef dripping. Kind of like I was trying to make up for lost fat. in the mince.
This was enough to make a triple. The portion used could make 2 good sized burgers or four sliders. Or a triple stack loaded with bacon and extra cheese. God, I’m a pig.
I went on a 40km bike ride before cooking this. I felt it was well deserved. All this exercise needs fuelling I guess. I still stick at 10.5 stone despite shoving over 4000 calories a day inside me.
Triple Bacon Cheeseburger Recipe
- 200g beef mince
- 1 Brioche bun
- 3 Rashers streaky smoked bacon
- 2 thumbnail sized chunks of beef dripping
- 2 Tbsp honey
- Pinch of salt
- Pinch of black ground pepper
- 3 Cheddar slices
- Grab your beef mince and make into four balls. Don't compress the mince too hard.
- Flatten them down with your hand into burger-shaped patties. Make them thin as this is a triple and needs to be edible! Cupe your hands gently around the edges to shape them.
- Pop them in the freezer for 10 mins to firm up.
- Pour the honey over the bacon and grill for 10 minutes.
- Lightly toast the buns under the grill for a minute or two each side. Be careful not to burn!
- Cook the patties in a deep frying pan, in the beef dripping. Cook for just two minutes
- When turning the patties, add the cheese slices to the cooked side of the patties, and place the lid (if you have one) on and cook for a further 2 minutes.
- Stack up, add some ketchup and enjoy!
Just use beef, and season with salt and pepper. No need for breadcrumbs or egg whites to bind your burgers. Use the freezer tip!
