Mozzarella and Tomato Chicken

There’s something about Mozzarella and Tomato Chicken. Well, mozzarella in general really. When melted, and served with rosy red tomatoes with a garnish of chopped parsley, it gives off an Italian, pizza like feel. The stringy creamy cheese, pairs up with the tomatoes and chopped herbs beautifully well.

This is an easy recipe, and doesn’t require too much prep. It can be done other ways in terms of stuffing the chicken but this way is pretty simple and can be slightly altered depending on what you’ve got in at the time.

This can be cooked in a roasting, or oven dish. I served it up with a bit of pasta to give it a real Italian feel, but I guess you could eat with a side of potatoes, chips or rice. This was really good with pasta. Simple flavours and textures and quickly chucked in a pan after chopping up a few ingredients. To make this more of a sauce, you can use chopped tomatoes, but I just wanted something quickly and used fresh tomatoes. The herbs and spices can be changed too – I used mixed herbs and oregano as it’s all I had, however it can be tweaked with basil or chilli if you’d prefer a bit of kick.

This isn’t going to set the world alight in terms of it being a taste sensation – but for 30 mins including prep this is a pretty banging chicken recipe. It’s easy to prep and you just chuck it in a roasting tin and let the oven do the work. I boiled up a bit of pasta and stirred in some Sunday dried tomato pasta whilst the chicken was cooking. I even managed to wash up and clean down the kitchen for when the food was ready.

Ingredients

  • 2 x Skinless chicken breasts
  • 4 tomatoes
  • 1/2 Onion diced
  • Handful of grated mozzarella
  • Tsp oregano
  • 4 Tablespoons balsamic vinegar
  • Tsp mixed herbs
  • A few Fresh parsley to serve

Instructions

  1. Preheat the oven to 180C/360F.
  2. Add the oil to a roasting pan, and add the chicken, chopped onion, dried herbs, most of the garlic saving a little bit. Then a generous seasoning of salt and pepper.
  3. In a bowl mix balsamic vinegar, sugar and a bit of garlic, whisk well and pour over chicken.
  4. Bake for 20-25 minutes until cooked, then add grated mozzarella and place back into the oven for 5-7 minutes until mozzarella starts to turn golden and crisp slightly.
  5. Serve with chopped fresh parsley.
