I haven’t done any baking that I’ve blogged about for some time now. I made some “naughty brownies” the other week but they aren’t my recipe so I didn’t write about them. In hindsight, I should of because they’re so good! You basically make cookie dough and line the bottom of your oven dish, lay Oreos on top, and then cover in brownie mixture. They’re soooo good but ever so bad! Like heart attack bad for you! I think we ate them all in 3 days which is why I only cook them once a year. They give you a real sugar high!
So fast forward to today and I’m really craving something naughty but not so naughty again.
I first had this chocolate tahini bread at a retreat in Kefalonia. The retreat was incredible and the food was amazing! Just really basic cooking, locally grown produce, fish freshly caught that day and the cakes freshly made that morning. Most mornings after we had our fruit and “healthy breakfast” items, we would share a piece of tahini banana bread with chocolate tahini spread and it was amazing. Nearly a year on and I still think how incredible it was. I suppose it wasn’t terrible for you as we were at a health retreat! So today I’m going to try and recreate that. What is Tahini?
If you think haven’t had tahini before, you may be wrong. Its used in hummus so if you’ve tried that you will have definitely tasted it. It’s got a delicious nutty taste and is great to combine in both sweet and savoury dishes.
Tahini is toasted sesame seeds ground to a paste, it’s a deliciously mild, nutty and creamy taste. The texture is a little like nut butter. Nice and thick. I have fallen so lucky with the tahini I bought, I got ours from Waitrose but I have heard some stories on certain brands that it’s quite chalky and acidic. This is definitely not the case with this one so I highly recommend it.
So far I have used tahini in in this banana bread, which is so good I am making again today. Home made hummus which was absolutely amazing and also in a tahini agave glaze. I will share that one very soon as it was absolutely delicious! I will try to use other descriptive words other than delicious, I know I have used it so much but it’s just soooo good.
- 2 bananas
- 1 egg
- 50g tahini 1/2 cup
- 60ml oil
- 85g brown sugar 3/4 cup plus a little
- 60g flour just under 2/3 cup
- 1 tsp bicarbonate of soda
- 30g cocoa powder 1/2 1/2 cup
- 100g dark choc chips
- Preheat your oven to 150 degrees and line your baking tin.
- Add your bananas into your bowl and mash or whisk together.
- Add in your tahini, oil, and egg and then whisk together again.
- Once combined, add in your sugar, flour, bicarbonate of soda and cocoa and then mix together with a spatula.
- Pour into your pre-lined baking tin and put into the oven for 40 minutes
